Pozol - Pozole

2 lbs pork rib eye
3 cubes or packets beef bouillon
2 lbs dried white or yellow field corn, hulls removed (hominy)
3 tablespoons vegetable oil
1 red bell pepper, chopped
1 rib celery, chopped
1/2 cup onions, chopped
1 head garlic
���annatto (achiote) and salt to taste


  1. Bring water to a boil in a saucepan over high heat. Add salt and hominy. Boil until hominy is tender. Drain water off.

  2. Heat oil in a large saucepan over moderate heat. Add onions, bell peppers, and beef bouillon. Cook, stirring occasionally until translucent, about 5 minutes.

  3. Increase heat to moderately high. Add pork, stirring occasionally until pork starts to brown, about three minutes. Stir in garlic, salt, annatto, and pepper. Reduce heat and simmer until pork is tender, about 10 minutes. Add hominy and stir occasionally, about 5 minutes. Serve with boiled green plantain.
