Pollo en Salsa - Chicken in Tomato Sauce

4 chicken breasts, deboned and fileted
3 large red bell peppers, seeded and cut into stripes
4 teaspoon vegetable oil
4 tomatoes
Salt and pepper to taste


Heat oil in a saucepan over medium heat. Add chicken breast, turning until golden brown. Add tomatoes, salt, and pepper. Simmer until tomatoes are soft. Serve with rice.
