Picadillo de Vainicas - Minced String Beans with Beef

2 lbs string beans, rinsed, trimmed, and chopped into 1/2-inch pieces
1 bunch cilantro, chopped
1 lb lean ground beef
1/2 cup onions, chopped
1/2 cup red bell pepper, diced
6 cloves garlic, minced
1 teaspoon annatto (achiote)
2 teaspoons vegetable oil
1 medium tomato, peeled, seeded, and chopped
1 teaspoon Worcestershire sauce
4 eggs, whipped
Salt and pepper to taste


  1. Heat vegetable oil in a saucepan over medium high. Add annatto, onions, garlic, red bell pepper, and cilantro. Stir occasionally for 5 minutes.

  2. Add lean ground beef and cook until loose (4 minutes.) Add tomatoes, string beans, and 2 cups boiling water. Cover and simmer until string beans soften.

  3. Add Worcestershire sauce, salt, pepper, and eggs. Stir until eggs are completely cooked. Serve with rice and beans or on a tortilla.
