Picadillo de Vainicas - Minced String Beans with Beef

2 lbs string beans, rinsed, trimmed, and chopped into 1/2-inch pieces
1 bunch cilantro, chopped
1 lb lean ground beef
1/2 cup onions, chopped
1/2 cup red bell pepper, diced
6 cloves garlic, minced
1 teaspoon annatto (achiote)
2 teaspoons vegetable oil
1 medium tomato, peeled, seeded, and chopped
1 teaspoon Worcestershire sauce
4 eggs, whipped
Salt and pepper to taste
- Heat vegetable oil in a saucepan over medium high. Add annatto, onions, garlic, red bell pepper, and cilantro. Stir occasionally for 5 minutes.
- Add lean ground beef and cook until loose (4 minutes.) Add tomatoes, string beans, and 2 cups boiling water. Cover and simmer until string beans soften.
- Add Worcestershire sauce, salt, pepper, and eggs. Stir until eggs are completely cooked. Serve with rice and beans or on a tortilla.
