Picadillo de Chayote - Minced Vegetable Pear

6 vegetable pears, rinsed, peeled, and cut into 1/4 inch cubes
1 cup fresh or thawed corn kernels or 3 corn on the cob
2 1/4 cups milk
4 1/2 oz butter
1/2 cup red bell pepper, chopped
1/2 cup onion, chopped
Salt and pepper to taste


Heat butter, peppers, and onions in a saucepan over medium low until lightly brown. Add vegetable pear and milk. Cook until vegetable pears are cooked (20 minutes). Add corn, salt, and pepper. Simmer for 5 more minutes. Serve with rice or on a tortilla.
