Picadillo de Chayote con Elote - Minced Vegetable Pear and Corn

4 large vegetable pears, finely chopped
2 1/2 cups fresh or thawed corn kernels or 5 corn on the cob
1/2 cup milk
1/2 lb ground beef
1/4 teaspoon annatto
2 teaspoons vegetable oil
1 teaspoon sugar
Pepper and ground cumin to taste


Heat oil in a saucepan over medium high heat. Add ground beef and brown. Add onions, annatto, and corn kernels. Stir occasionally until light brown. Add vegetable pears, ground cumin, pepper, milk, salt, and sugar. Stir and simmer until vegetables are soft. Serve with rice and beans or on a tortilla.
