Pejibayes - Peach Palm Fruits

A cluster of peach palm fruits
Cream cheese or mayonnaise and salt & pepper to taste


Detach all peach palm fruits from cluster. Rinse well. Place peach palm fruits in a saucepan. Add water until peach palms are completely covered. Bring to a boil and reduce heat to medium low until cook, about 1 1/2 hours. Drain and wait until peach palm fruits are cold. Peel and pit peach palm fruits. Add mayonnaise or cream cheese, and salt and pepper as desired.
