Frito - Pork Stew

Cooking Time: 2 hours Yield: 12 servings Level: Intermediate


6 lbs pork (an assortment of pork head, kidney, heart, and liver)
2 bunches cilantro, chopped
1 red bell pepper, diced
5 large garlic cloves
Oregano, thyme, and pepper to taste
Hot pepper (optional)


Place pork in a deep saucepan. Add water until pork is completely covered. Add cilantro, red bell pepper, garlic, and oregano, thyme, pepper to taste. Simmer for two hours on high heat, until pork is soft.

Note: If you are cooking pork kidney, cut the kidney in a central transversal cut, place in a saucepan with water and let boil for 3 minutes. Then, drain water and fill pan with new water. Let it boil again for another 3 minutes. Remove kidneys, dice and add them to the other meat. Serve with white long grain rice.
