Ensalada de Chayote - Vegetable Pear Salad

3 vegetable pears, rinsed
1 cup cottage cheese
7 purple salad leaves, 1/2 lb baby field greens or mesclun, rinsed and dried
Pepper to taste


Bring 2 quarts water to a boil in a saucepan over high heat. Add vegetable pears. Reduce heat to medium-low until vegetable pears are tender, about 20 minutes. Drain and transfer vegetable pears to a cutting board. Skin vegetable pears. Cut them in thin slices. Toss purple salad greens and mix with vinaigrette in a bowl. Place the mix in a platter. Arrange vegetable pear slices over salad mix. Add a teaspoon cottage cheese over each vegetable pear slice. Drizzle fresh ground pepper to taste.
