Costa Rican Style Rice

Cooking Time: 30 min Yield: 4 servings Level: Easy


1 cup white long grain rice
2 tablespoons vegetable oil
1/2 cup white onions, chopped
1/2 cup red bell peppers, chopped
1 whole clove garlic, peeled
1 3/4 cups water
Salt to taste


  1. Rinse rice on a strainer until water runs clear. Let it dry in strainer. 

  2. Heat vegetable oil in a saucepan over medium. Add rice. Stir often until slightly brown.

  3. Stir in onions, bell peppers and garlic. Add 1 1/2 cups water and salt. Bring to a boil over moderately high heat.

  4. Cover and simmer without stirring until all water is absorbed and rice is tender. Turn off heat and leave rice in saucepan covered for 10 minutes.
