Costa Rican Style Rice

1 cup white long grain rice
2 tablespoons vegetable oil
1/2 cup white onions, chopped
1/2 cup red bell peppers, chopped
1 whole clove garlic, peeled
1 3/4 cups water
Salt to taste
- Rinse rice on a strainer until water runs clear. Let it dry in strainer.
- Heat vegetable oil in a saucepan over medium. Add rice. Stir often until slightly brown.
- Stir in onions, bell peppers and garlic. Add 1 1/2 cups water and salt. Bring to a boil over moderately high heat.
- Cover and simmer without stirring until all water is absorbed and rice is tender. Turn off heat and leave rice in saucepan covered for 10 minutes.
