Bacalao - Cod Soup

2 lbs cod, thoroughly rinsed
1/4 teaspoon vegetable oil
1 cup onions, chopped
1 cup tomatoes, chopped
2 cloves garlic, crushed
1/2 tablespoon parsley, minced
4 red bell peppers, cut in thing stripes


Soak cod in water for 24 hours. Cut cod into 2-inch square pieces. Place cod in a saucepan. Add water and bring it to a boil over medium high heat. Drain. Heat oil in another saucepan over medium high. Add garlic, parsley, red bell peppers, onions and tomatoes. Stir often until onions are light brown. Cover and simmer for 30 minutes. Add cod in the sauce and simmer uncovered for 35 minutes.
